That's final, with no more 'shaking'....

Ecologically cultivated and controlled wines obtained from the lower yields of the harvested, healthy grapes which then undergo careful fermentation and treatment, are the optimal raw material for the production of sparkling wine.

Our quality sparkling wines:
We purchase this wine, or in autumn the grapes, from regional organic wine growers (ecovin, - region Nahe and Mittelrhein).
Our sparkling wine is exclusively produced in the Traditional Method. After at least 9 months (at present up to 5 years) in contact with the yeast in the bottle, the sparkling wine undergoes manual riddling followed by disgorging à la volée.

Special features:
All sparkling wines are left as long as possible in contact with the yeast, with disgorging done only recently (Récemment Dégorgé). They are thus able to incorporate additional tasty and aromatic substances and finally get their optimal fine sparkling character.
The particular paper capsule around the bottle neck, with a vine-shoot going through the wire-eyelet, patented by the German Patent Office, is to underline the ecological cultivation and processing and gives every bottle its individual character.
